    Most people don't associate the words "fried" and "light", but with a little guidance, fried rice can actually be a healthy main course or side dish. Plus, the ability to incorporate leftovers of virtually any type—meat or vegetable—makes fried rice dishes a great go-to in a time crunch.
    First up, bring a favorite takeout dinner packed with fresh veggies and tofu to the table in about 15 minutes.

    Ingredients

    2 cups uncooked instant rice

    2 tablespoons vegetable oil, divided

    (14-ounce) package reduced-fat firm tofu, drained and cut into (1/2-inch) cubes

    large eggs, lightly beaten

    1 cup (1/2-inch-thick) slices green onions

    1 cup frozen peas and carrots, thawed

    garlic cloves, minced

    1 teaspoon minced peeled fresh ginger
    2 tablespoons sake (rice wine)
    3 tablespoons low-sodium soy sauce
    1 tablespoon hoisin sauce
    1/2 teaspoon dark sesame oil
    Thinly sliced green onions (optional)

    1. Cook the potatoes 10 minutes in a large pan with enough water to cover; add the beans and cook 7 minutes more.
    2. Remove to a large bowl.
    3. Add the onions, cucumber, and half of the cheese and tomatoes to the potatoes and the beans and toss the salad.
    4. Mix the mayonnaise, mustard and honey and pour over the salad.
    5. Sprinkle with the remaining cheese and mint leaves. Add a little salt and pepper if you wish.

    1. Slice the muffins in half, and place them cut side up in a baking pan or on a cookie sheet.
    2. Spoon some sauce onto the muffin halves, using just enough to cover the tops (you may not use the whole can).
    3. Top the sauce with the meat of your choice.
    4.  Sprinkle with Italian seasoning and cheese.
    5. Place under the broiler until the cheese melts and starts to bubble (3-5 minutes).
    6. Serve immediately.

    Traditional Cheddar Cauliflower Cheese - Gratin English Tips Recipe

    1. If oven baking, pre-heat oven to 225C or 450°F.
    2. Trim the cauliflower & break into small florets.
    3. Boil in salted water for 10-15 minutes or until just tender.
    4. Drain in a colander and then place in a buttered ovenproof baking dish.
    5. Add the milk, flour and butter to a saucepan.
    6. Heat and whisking with a wire whisk continuously until the sauce thickens, boils and is smooth.
    7. Allow to simmer for a further 2 minutes.
    8. Add three-quarters of the grated cheese, mustard, a pinch of nutmeg and seasoning.
    9. Cook for further minute stirring well.
    10. Pour the sauce over the cauliflower.
    11. Mix the remaining cheese, and breadcrumbs, if using, together, sprinkle over the top.
    12. Place under a hot grill until golden brown, OR, bake in a pre-heated oven 225C/450F for about 15 to 25 minutes until golden brown and bubbling.
    13. Serve immediately.

    1. In heavy saucepan, combine butter, sugar, water, and salt.
    2. Cook to hard-crack stage (300°F) stirring constantly and watching carefully.
    3. Immediately pour into ungreased 13"x9" pan.
    4. Cool until hard.
    5. Melt chocolate over hot, but not boiling water.
    6. Spread over toffee; sprinkle with nuts, pressing them into chocolate.
    7. Let stand 2-3 hours or chill 30 minutes.
    8. Break into bite-size pieces.

    Muffins Bread Machine Method English Tips Recipe

    1. Put ingredients in the machine in the order listed.
    2. Start the dough cycle.
    3. When the cycle is finished.
    4. Sprinkle corn meal over your work area.
    5. Use your hands to pat the dough into a 1/2 inch thick rectangle.
    6. Turn the dough so that each side gets lightly coated with cornmeal.
    7. Cut into 8 to 10 rounds.
    8. An empty large tuna can works well When you run out of dough gather up the trimmings and cut more rounds.
    9. Place the rounds on a baking sheet, cover and let rise for 20- 30 minutes--until not quite double.
    10. Heat a dry cast iron skillet or griddle over a low flame.
    11. (I do spray mine with Pam).
    12. Cook the muffins about 5 to 7 minutes on each side.
    13. They should be golden brown when you turn them.
    14. Split the muffins with a fork or serrated knife and serve warm.
    15. These freeze well and can be reheated in the microwave or toasted.
